Originally kiwi is native to southwest China. In the beginning of the 20. century the kiwi was introduced to New Zealand, which is now the main provider for kiwis, next to Italy. The kiwifruit has a furry peel which keeps the pulp safe from evaporation. The harvest in New Zealand is between May and December. Kiwi contains of proteolytic (protein-splitting) enzymes, so it should not be mixed with dairy products.

25ml Monin Kiwi syrup
40ml rum
2 pieces of kiwi
1/4 of fresh lime
soda water
Muddle Monin syrup, rum and fruits in a shaker tin filled with ice cubes. Shake vigorously. Pour into a long drink glass. Top with soda water.
